Ingredients

For the Ramen:

2 boneless, skinless chicken thighs, sliced

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch piece ginger, grated

2 tablespoons gochujang (Korean chili paste)

4 cups chicken broth

2 packets of fresh or dried ramen noodles

1 cup spinach, washed and chopped

1 cup bean sprouts

2 green onions, sliced

1 soft-boiled egg (optional)

Sesame seeds for garnish

For the Creamy Garlic Sauce:

1/4 cup mayonnaise

2 teaspoons soy sauce

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Sriracha (adjust to taste)

Instructions

Prepare the Creamy Garlic Sauce: In a small bowl, mix together mayonnaise, soy sauce, minced garlic, lemon juice, and Sriracha. Adjust the spice level to your preference, then set aside.

Cook the Chicken: In a large pot or skillet, heat vegetable oil over medium-high heat. Add the sliced chicken thighs, and cook for about 5-7 minutes until browned and fully cooked. Remove the chicken from the skillet and set aside.

Sauté Aromatics: In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.

Make the Broth: Add the gochujang to the skillet, stirring well to combine with garlic and ginger. Pour in the chicken broth and bring it to a simmer.

Cook the Noodles: Once the broth is simmering, add the ramen noodles and cook according to package instructions (usually about 3-4 minutes). Stir in the cooked chicken, chopped spinach, and bean sprouts during the last minute of cooking to soften.

Serve the Ramen: Once cooked, ladle the ramen into bowls, ensuring each has the chicken, veggies, and noodles. If using, place a soft-boiled egg on top.

Drizzle with Sauce: Generously drizzle the creamy garlic sauce over each bowl of ramen.

Garnish and Enjoy: Sprinkle sliced green onions and sesame seeds on top before serving.
