Ingredients

1 lb ground chicken

2 tablespoons soy sauce

1 tablespoon Sriracha (adjust to taste)

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 bell pepper, diced (any color)

1 cup shredded carrots

2 green onions, sliced

2 cloves garlic, minced

1 teaspoon ginger, grated

2 cups cooked jasmine rice (or rice of your choice)

Toasted sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Instructions

Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook it for about 5-7 minutes, breaking it apart with a spatula until it’s no longer pink.

Add Aromatics: Once the chicken is cooked, add the minced garlic and grated ginger. Stir and cook for another minute until fragrant.

Combine Sauce: In a small bowl, whisk together the soy sauce, Sriracha, honey, rice vinegar, and sesame oil until well combined.

Add Vegetables: Add the diced bell pepper and shredded carrots to the skillet. Stir them in and cook for about 3 minutes until the vegetables are tender but still crisp.

Sauce It Up: Pour the sauce over the chicken and vegetables. Stir to evenly coat everything and cook for an additional 1-2 minutes to heat through and combine flavors.

Serve: Divide the cooked jasmine rice into bowls, top with the firecracker ground chicken mixture, and garnish with sliced green onions, toasted sesame seeds, and cilantro if desired.

Enjoy: Serve immediately and enjoy your quick and delicious meal!
