Ingredients

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and black pepper, to taste

1 tablespoon olive oil

1 teaspoon paprika

½ teaspoon red pepper flakes (optional, for heat)

Instructions

Prep the Potatoes: Start by washing the baby potatoes thoroughly. Cut them in half and set aside.

Season the Steak: In a bowl, combine the steak cubes with paprika, salt, black pepper, and a drizzle of olive oil. Toss well to coat the meat evenly and let it marinate for about 15-20 minutes.

Cook the Potatoes: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the halved baby potatoes, cut side down. Season with salt and pepper. Cook for about 10-12 minutes, flipping occasionally until they are golden and tender. Remove from the skillet and transfer to a plate.

Cook the Steak: In the same skillet, increase the heat to medium-high and add the marinated steak cubes. Sear the steak for 3-4 minutes, until browned on all sides. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to prevent the garlic from burning.

Combine and Flavor: Return the cooked potatoes to the skillet with the steak. Add the remaining 2 tablespoons of butter, fresh rosemary, and red pepper flakes (if using). Toss everything together gently over medium heat for another 2-3 minutes, allowing the flavors to meld.

Garnish and Serve: Remove the skillet from heat, sprinkle with fresh parsley, and adjust seasoning if necessary. Serve immediately in the skillet for a rustic presentation or plate it up for a more polished look.
