Garlic Butter Steak and Potatos

2 ribeye steaks (about 1-inch thick)

1 lb baby Yukon gold potatoes, halved

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

2 sprigs fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon smoked paprika (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: In a large pot, add the halved baby Yukon gold potatoes and cover them with water. Bring to a boil and cook for about 12-15 minutes until fork-tender. Drain and set aside.

    Season the Steak: Pat the ribeye steaks dry with paper towels and season both sides generously with salt, black pepper, and smoked paprika if using.

      Sear the Steaks: In a large cast-iron skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on one side without moving them.

        Flip and Add Garlic Butter: Flip the steaks and reduce the heat to medium. Add 2 tablespoons of butter, minced garlic, and chopped rosemary to the skillet. As the butter melts, tilt the pan slightly and use a spoon to baste the steaks with the melted butter and garlic for additional flavor. Cook for another 4-5 minutes for medium-rare, or longer for your desired doneness.

          Remove and Rest: Once the steaks are done to your liking, remove them from the skillet and let them rest on a plate for at least 5 minutes. Cover lightly with foil to keep warm.

            Sauté the Potatoes: In the same skillet, add the drained potatoes and the remaining 2 tablespoons of butter. Sauté over medium heat, stirring occasionally, until the potatoes are golden brown and crispy, about 5-7 minutes. Taste and adjust seasoning if necessary.

              Serve: Slice the steaks against the grain and serve alongside the garlic butter sautéed potatoes. Drizzle any remaining garlic butter from the skillet over the steak and potatoes, and garnish with freshly chopped parsley for a pop of color.
