Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

6 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until tender. Drain and set aside.

    Sear the steak: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the steak cubes in a single layer, making sure not to overcrowd the pan. Season with salt and pepper. Sear for about 2-3 minutes per side, or until browned and cooked to your desired doneness. Remove steak from the skillet and set aside.

      Cook the potatoes: In the same skillet, add the remaining tablespoon of olive oil. Add the cooked potatoes and cook for about 5-6 minutes, stirring occasionally until they’re golden and crispy.

        Make the garlic butter: Reduce the heat to medium. Add the butter to the skillet followed by the minced garlic, rosemary, and thyme. Stir and cook for about 1-2 minutes, or until the garlic becomes fragrant but not browned.

          Combine steak and potatoes: Return the seared steak bites to the skillet with the garlic butter and toss everything together until the steak is well coated with the garlic butter sauce. Cook for another minute just to warm everything through.
