Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tbsp unsalted butter

4 cloves garlic, minced

1 tbsp fresh parsley, chopped (plus more for garnish)

1 tsp paprika

1 tsp onion powder

Salt and pepper, to taste

2 tbsp olive oil

Juice of 1/2 lemon

Optional: Fresh rosemary sprigs for garnish

Prepare the Potatoes: In a pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes until fork-tender. Drain and set aside.

    Season Steak: In a bowl, toss the steak cubes with salt, pepper, paprika, and onion powder until evenly coated.

      Sear the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the drained potatoes and sauté for 5-7 minutes until they are golden brown and crispy. Remove them from the skillet and set aside.

        Cook the Steak Bites: In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the steak cubes in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side or until cooked to your desired doneness. Remove the steak cubes from the skillet and set aside.

          Make Garlic Butter: In the same skillet over medium heat, reduce heat slightly and add the butter. Once melted, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.

            Combine: Add the cooked steak bites back to the skillet along with the sautéed potatoes. Drizzle with lemon juice, and sprinkle in fresh parsley, stirring gently to coat everything in the garlic butter mixture.

              Serve: Plate the steak bites and potatoes, garnishing with additional parsley and optional rosemary sprigs for an aromatic touch. Serve hot and enjoy!
