For the Chicken Marinade:

500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

4 cloves garlic, minced

1 tablespoon ginger, grated

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon garam masala

1 teaspoon turmeric

1 teaspoon chili powder

Salt, to taste

For the Tikka Masala Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 green chili, slit (optional, for spice)

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1/2 teaspoon turmeric

2 tablespoons tomato paste

400g canned tomatoes, crushed

1 cup heavy cream

Fresh cilantro, for garnish

Salt, to taste

Marinate the Chicken: In a bowl, combine the yogurt, lemon juice, garlic, ginger, cumin, coriander, garam masala, turmeric, chili powder, and salt. Add the chicken pieces, coat them well, cover with plastic wrap, and refrigerate for at least 1 hour (or overnight for best results).

    Cook the Chicken: Preheat your grill or oven to 200°C (about 400°F). Place the marinated chicken on skewers (if using) and grill for about 10-15 minutes, turning occasionally until cooked through and slightly charred. Alternatively, you can bake them for the same duration.

      Make the Sauce: In a large pan over medium heat, add the vegetable oil. Once hot, add the chopped onion and sauté until translucent. Then, add minced garlic, ginger, and slit green chili, and cook for another 2 minutes until fragrant.

        Spice it Up: Stir in the ground cumin, ground coriander, garam masala, and turmeric. Cook for another minute, allowing the spices to release their aroma.

          Add Tomatoes: Mix in the tomato paste and crushed tomatoes. Let it simmer for about 10 minutes, stirring occasionally, until the sauce thicks slightly.

            Finish the Sauce: Lower the heat, stir in the heavy cream and add salt to taste. Allow the sauce to simmer for another 5 minutes, letting the flavors meld together.

              Combine Chicken and Sauce: Add the grilled chicken pieces to the sauce, stirring gently to coat them in the rich tikka masala sauce. Cook together for an additional 5 minutes.

                Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve hot with rice or naan.
