Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tbsp extra virgin olive oil (plus more for drizzling)

1 garlic clove, minced

Juice of 1 lemon

1/2 tsp ground cumin

Salt and pepper to taste

1/4 cup Greek yogurt

1/2 cup diced cucumber

1/2 cup cherry tomatoes, halved

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Pita chips or fresh vegetables (for serving)

Instructions
 

In a food processor, combine the drained chickpeas, tahini, olive oil, minced garlic, lemon juice, and ground cumin. Blend until smooth. If necessary, add a bit of water to achieve your desired consistency.

    Season the hummus with salt and pepper to taste. Adjust lemon juice if more acidity is desired.

      Spread the hummus in a shallow serving bowl, creating a small well in the center.

        In the well, layer the Greek yogurt and then top with diced cucumber, cherry tomatoes, Kalamata olives, and crumbled feta cheese.

          Drizzle extra virgin olive oil on top, and garnish with freshly chopped parsley for a colorful finish.

            Serve with pita chips or fresh vegetables for dipping.
