Ingredients

1 lb ground beef

4 medium potatoes, diced into 1-inch cubes

1 large onion, finely chopped

3 cloves garlic, minced

1 cup beef broth

1 cup frozen peas and carrots mix

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish

Instructions

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Add the Potatoes: Stir in the diced potatoes and cook for an additional 5 minutes, allowing them to get a bit of color.

Season It Up: Add the Worcestershire sauce, paprika, thyme, salt, and pepper to the skillet. Mix well to combine.

Pour in the Broth: Carefully pour in the beef broth and bring the mixture to a simmer. Cover the skillet with a lid and reduce the heat to low. Cook for about 15-20 minutes, or until the potatoes are tender.

Incorporate the Veggies: Stir in the frozen peas and carrots. Cover and cook for another 5 minutes until the veggies are heated through. Adjust seasoning if necessary.

Garnish and Serve: Remove from heat and let it sit for a couple of minutes. Garnish with freshly chopped parsley before serving.
