1lb ground beef (or ground turkey)

2 medium zucchinis, diced

1 large sweet potato, peeled and diced

1 small onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 tsp smoked paprika

1 tsp dried oregano

1 tsp cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Sweet Potato: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potato and sauté for about 10 minutes, or until they begin to soften.

    Cook the Aromatics: Add the chopped onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for another minute until fragrant.

      Brown the Ground Beef: Push the vegetables to the side of the skillet. In the empty space, add the remaining tablespoon of olive oil and ground beef. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain any excess fat if needed.

        Add the Zucchini: Once the beef is cooked through, add the diced zucchini to the skillet. Mix all ingredients together and season with smoked paprika, oregano, cumin, salt, and pepper.

          Finish Cooking: Cook everything together for another 5-7 minutes, stirring occasionally until the zucchini is tender and the sweet potatoes are fully cooked.
