1 lb ground beef (85% lean)

1 medium sweet potato, peeled and diced

2 medium zucchinis, diced

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and black pepper to taste

2 tablespoons olive oil

1 cup chicken broth (or beef broth)

Fresh parsley for garnish (optional)

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.

    Cook the Ground Beef: Add the ground beef to the skillet. Cook, breaking it apart with a wooden spoon, until it's browned and cooked through (about 5-7 minutes). Drain any excess fat if necessary.

      Add Sweet Potatoes: Stir in the diced sweet potato, smoked paprika, and Italian seasoning. Cook for about 5 minutes, stirring occasionally, until the sweet potatoes start to soften.

        Incorporate Zucchini: Add the diced zucchini to the skillet and stir well. Pour in the chicken broth, cover the skillet, and let it simmer for another 10-12 minutes, or until the sweet potatoes are tender and the zucchini is cooked through.

          Season: Uncover and season with salt and black pepper to taste. Toss gently to combine all ingredients.
