Ground Turkey and Peppers

1 pound ground turkey

2 bell peppers (red and yellow), diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

1 avocado, diced (optional)

Lime wedges (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.

        Stir in the diced bell peppers and cook for another 4-5 minutes until they soften slightly.

          Add the diced tomatoes (with juices), cumin, smoked paprika, chili powder, salt, and pepper. Mix well and let it simmer for about 10 minutes, allowing the flavors to meld together.

            Taste and adjust seasoning if needed. Remove from heat and garnish with fresh cilantro and diced avocado if using.

              Serve warm with lime wedges on the side for an extra zesty kick.
