Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup broccoli florets (fresh or frozen)

1 cup bell peppers, diced (any color)

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

1/2 cup chicken broth

1 cup shredded cheddar cheese

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

      Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until the turkey is browned and fully cooked, about 5-7 minutes.

        Stir in the diced sweet potatoes, bell peppers, broccoli florets, smoked paprika, cumin, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.

          Pour in the chicken broth, mixing well. Bring to a gentle simmer, then reduce heat and let it cook for about 10 minutes until the sweet potatoes are slightly tender.

            Transfer the turkey and vegetable mixture into a baking dish. Spread evenly and sprinkle the shredded cheddar cheese over the top.

              Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Remove from the oven and let it cool slightly. Garnish with fresh parsley if desired before serving.
