Ground Turkey Sweet Potato Skillet

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, chopped

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder (optional)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup spinach (fresh or frozen)

1/4 cup chicken or vegetable broth

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they are tender and starting to brown.

    Add Onions and Peppers: Add the chopped onion and red bell pepper to the skillet with the sweet potatoes. Cook for an additional 5 minutes until the vegetables are softened.

      Sauté Garlic: Stir in the minced garlic and cook for about 1 minute, until fragrant.

        Brown the Turkey: Push the vegetables to the side of the skillet and add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the ground turkey, breaking it up with a spatula. Season with smoked paprika, cumin, chili powder (if using), salt, and pepper. Cook until the turkey is browned and fully cooked, about 6-7 minutes.

          Combine and Simmer: Mix the cooked sweet potatoes and vegetables with the ground turkey. Pour in the chicken or vegetable broth and stir to combine. Allow to simmer for 3-4 minutes, until heated through.

            Add Spinach: Stir in the spinach and cook until wilted, about 2 minutes. Taste and adjust seasonings if necessary.

              Serve and Garnish: Serve the skillet hot, garnished with fresh cilantro or parsley if desired.
