Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 tsp smoked paprika

1 tsp cumin

½ tsp chili powder

Salt and pepper, to taste

2 tablespoons olive oil

2 cups spinach, fresh

Optional toppings: avocado slices, fresh cilantro, lime wedges

Instructions
 

Prep the sweet potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are tender and lightly caramelized. Remove them from the skillet and set aside.

    Sauté the aromatics: In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the chopped onion and bell pepper. Sauté for about 5 minutes until the vegetables are softened. Stir in the garlic and cook for an additional minute until fragrant.

      Cook the turkey: Push the vegetables to the side of the skillet and add the ground turkey. Use a spatula to break it apart and cook until browned, about 6-8 minutes. Ensure it is cooked through and no longer pink.

        Add spices and combine: Stir in the smoked paprika, cumin, and chili powder. Mix everything together well.

          Combine with sweet potatoes: Add the cooked sweet potatoes back to the skillet, along with the fresh spinach. Cook for an additional 2-3 minutes, stirring until the spinach is wilted. Adjust seasoning with salt and pepper to taste.
