1 lb ground turkey

1 cup broccoli florets

1 bell pepper, sliced (any color)

1 cup snap peas

2 carrots, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium)

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 tablespoon cornstarch

1/4 cup water

Cooked rice or quinoa (for serving)

Optional toppings: sesame seeds, chopped scallions, or red pepper flakes

Prepare the sauce: In a small bowl, whisk together the soy sauce, honey or maple syrup, rice vinegar, sesame oil, and cornstarch. Add water and mix until smooth. Set aside.

    Cook the turkey: In a large skillet or wok over medium-high heat, add vegetable oil. Once hot, add ground turkey and cook until browned and cooked through, about 5-7 minutes. Use a spatula to break up the turkey into small pieces as it cooks.

      Add vegetables: Stir in minced garlic and grated ginger, cooking for an additional 1 minute until fragrant. Then, add broccoli, bell pepper, snap peas, and carrots to the skillet. Sauté for about 4-5 minutes or until the vegetables are tender-crisp.

        Combine sauce and stir-fry: Pour the prepared teriyaki sauce over the turkey and vegetables. Stir well to combine, allowing the sauce to coat everything. Cook for another 2-3 minutes until the sauce thickens and becomes glossy.

          Serve: Remove from heat and serve the stir fry over a bed of cooked rice or quinoa. Garnish with sesame seeds, chopped scallions, or red pepper flakes if desired.
