Ham & Bacon Cheesy Potatoes

2 lbs baby potatoes, halved

1 cup cooked ham, diced

6 slices of bacon, cooked and crumbled

1 cup shredded sharp cheddar cheese

1 cup sour cream

1/2 cup cream cheese, softened

1/4 cup green onions, chopped (plus more for garnish)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/4 tsp paprika (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Potatoes: In a large pot, boil the halved baby potatoes in salted water for about 10-12 minutes or until fork-tender. Drain and set aside.

      Prepare Cheese Mixture: In a large bowl, combine the sour cream, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined and smooth.

        Combine Ingredients: Add the cooked ham, crumbled bacon, and chopped green onions to the cheese mixture. Fold in the boiled potatoes gently until everything is well coated.

          Layer in Baking Dish: Transfer the potato mixture to a greased 9x13 inch baking dish. Spread it out evenly and sprinkle the shredded cheddar cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it sit for a few minutes. Sprinkle with additional green onions and a dash of paprika before serving.
