Hawaiian Shoyu Chicken

Ingredients
  

2 lbs chicken thighs, boneless and skinless

1 cup soy sauce

1/2 cup brown sugar

1/4 cup rice vinegar

1/4 cup honey

4 cloves garlic, minced

1 inch ginger, grated

1 tablespoon sesame oil

1 tablespoon cornstarch (optional for thickening)

2 tablespoons water (if using cornstarch)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

In a large mixing bowl, combine the soy sauce, brown sugar, rice vinegar, honey, minced garlic, grated ginger, and sesame oil. Stir well until the sugar is dissolved.

    Place the chicken thighs in a large zip-top bag or shallow dish, and pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight for maximum flavor.

      Preheat your grill or a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later use.

        Grill or pan-sear the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature reaches 165°F).

          In a saucepan, bring the reserved marinade to a boil. If you desire a thicker sauce, mix cornstarch with water in a separate bowl, then add it to the boiling marinade, stirring continuously until thickened (about 2-3 minutes).

            Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Then slice the chicken and drizzle the thickened sauce over it.

              Garnish with chopped green onions and sesame seeds before serving. Enjoy your Hawaiian Shoyu Chicken with steamed rice or a fresh salad!
