2 lbs boneless, skinless chicken thighs

1/4 cup honey

2-3 tablespoons chipotle in adobo sauce (adjust based on spice preference)

1 tablespoon apple cider vinegar

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup chicken broth (for slow cooker) or 1/2 cup (for Instant Pot)

Corn or flour tortillas (for serving)

Toppings: diced onions, cilantro, avocado, lime wedges, and crumbled feta or cotija cheese

Instructions
 

Prepare the Chicken: In a bowl, mix honey, chipotle in adobo sauce, apple cider vinegar, soy sauce, garlic powder, onion powder, cumin, paprika, salt, and pepper to create a marinade.

    Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Ensure the chicken is well-coated. Marinate for at least 30 minutes or overnight for best flavor.

      Slow Cooker Instructions:

        - Place the marinated chicken in the slow cooker. Pour in the chicken broth.

          - Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and shreds easily.

            Instant Pot Instructions:

              - Add the marinated chicken to the Instant Pot. Pour in the chicken broth.

                - Secure the lid and cook on high pressure for 10-12 minutes. Allow for a natural release for 10 minutes, then quick release any remaining pressure.

                  Shred the Chicken: Once the chicken is cooked, remove it from the cooker and shred it with two forks. Return the shredded chicken to the cooker and mix it with the sauce left in the pot.

                    Assemble the Tacos: Warm the tortillas in a skillet or microwave. Fill each tortilla with the honey chipotle chicken, then top with diced onions, cilantro, avocado, a squeeze of lime, and cheese if desired.
