Ingredients

1 pound (450g) baby carrots, washed and trimmed

3 tablespoons unsalted butter

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Coating: In a small saucepan, melt the butter over low heat. Once melted, add the honey, minced garlic, and thyme. Stir well until combined and remove from heat.

Season the Carrots: Place the baby carrots in a large mixing bowl. Pour the honey garlic butter mixture over the carrots and season with salt and black pepper. Toss until the carrots are evenly coated.

Roast the Carrots: Spread the coated carrots in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, turning them halfway through cooking for even roasting.

Final Touches: Remove the baking sheet from the oven and let the carrots cool for a few minutes. Garnish with fresh parsley for color and an extra layer of flavor before serving.
