3 tablespoons unsalted butter, melted

3 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

In a large mixing bowl, combine the melted butter, honey, minced garlic, thyme, salt, and pepper. Whisk until well combined.

Add the carrots to the bowl and toss until they are evenly coated with the honey garlic butter mixture.

Spread the coated carrots in a single layer on the prepared baking sheet.

Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through to ensure even cooking.

Once cooked, remove the carrots from the oven and garnish with freshly chopped parsley.

Serve warm as a delicious side dish to accompany your favorite main course.
