Honey Lime Chicken & Avocado Rice Stack

For the Chicken:

2 large chicken breasts

3 tablespoons honey

2 tablespoons lime juice (freshly squeezed)

1 tablespoon soy sauce

2 cloves garlic, minced

1 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

For the Avocado Rice:

1 cup jasmine rice

2 cups chicken broth (or water)

1 ripe avocado, diced

1 lime (juice and zest)

2 tablespoons fresh cilantro, chopped

Salt to taste

For Assembly:

½ cup cherry tomatoes, halved

½ cup corn (cooked or canned)

Additional cilantro for garnish

Lime wedges for serving

Marinate the Chicken: In a bowl, whisk together honey, lime juice, soy sauce, minced garlic, cumin, salt, and pepper. Add the chicken breasts and coat well. Let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

    Cook the Rice: Rinse jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until rice is fluffy. Remove from heat and let it sit for 5 minutes.

      Prepare Avocado Mix: In a bowl, combine cooked rice, diced avocado, lime juice, lime zest, cilantro, and salt. Gently mix to combine, taking care not to mash the avocado too much.

        Cook the Chicken: In a skillet, heat olive oil over medium-high heat. Remove chicken from marinade (discard marinade) and add to the skillet. Cook for about 6-7 minutes on each side until fully cooked and golden brown. Let rest for a few minutes, then slice.

          Assembly: In a stackable manner, layer the avocado rice on a plate, followed by sliced chicken, cherry tomatoes, and corn. Repeat the layers if desired.
