Ingredients

2 lbs chicken thighs (boneless and skinless)

1/2 cup soy sauce

1/4 cup pineapple juice

1/4 cup brown sugar

1/4 cup ketchup

2 cloves garlic (minced)

1 tablespoon ginger (grated)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional for heat)

Sliced green onions (for garnish)

Fresh cilantro (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a large bowl, combine soy sauce, pineapple juice, brown sugar, ketchup, minced garlic, grated ginger, rice vinegar, sesame oil, black pepper, and red pepper flakes. Mix well.

Add Chicken: Place the chicken thighs into the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours (or overnight for best results).

Prepare the Grill: Preheat your grill to medium-high heat. Oil the grates to prevent sticking.

Grill the Chicken: Remove the chicken from the marinade, shaking off excess marinade. Grill the chicken for about 6-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F).

Baste while Grilling: During the last few minutes of grilling, you can baste the chicken with the reserved marinade (boil it first for safety).

Serve: Once cooked, remove the chicken from the grill and let it rest for a few minutes. Slice and serve garnished with sliced green onions, fresh cilantro, and a sprinkle of sesame seeds.
