1 cup apple cider

1/4 cup unsalted butter, melted

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 cup granulated sugar (for rolling)

1 teaspoon ground cinnamon (for rolling)

Instructions
 

Reduce the Cider: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and let it simmer until the cider is reduced to about 1/2 cup (about 15-20 minutes). Let it cool slightly.

    Preheat Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or butter.

      Mix Wet Ingredients: In a large mixing bowl, whisk together melted butter, brown sugar, granulated sugar, and reduced apple cider. Stir in the eggs and vanilla extract until fully combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.

            Fill Donut Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.

              Bake: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Allow donuts to cool in the pan for about 5 minutes before transferring them to a wire rack.

                Prepare Sugar Coating: In a shallow bowl, mix together the granulated sugar and ground cinnamon.
