Ingredients

2 cups rolled oats

2 large apples, peeled, cored, and diced

1/2 cup unsweetened applesauce

1 1/2 cups almond milk (or any milk of your choice)

1/4 cup maple syrup or honey (optional)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir until well mixed.

Prepare the Wet Ingredients: In another bowl, whisk together the almond milk, applesauce, maple syrup (if using), and vanilla extract.

Combine the Mixtures: Pour the wet mixture into the dry ingredients and stir until fully combined. Fold in the diced apples, chopped nuts, and raisins or cranberries if using.

Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish and spread it evenly. Gently press down to ensure everything is packed in.

Bake: Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the oatmeal bake to cool for about 10 minutes before slicing into squares. Serve warm, and enjoy with a splash of almond milk or a drizzle of extra maple syrup, if desired.
