2 cups rolled oats

2 large apples, peeled, cored, and diced (preferably Honeycrisp or Fuji)

2 cups unsweetened almond milk (or any milk of choice)

1/3 cup maple syrup (or honey)

1/4 cup unsweetened applesauce

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup chopped walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

Cooking spray or coconut oil for greasing the baking dish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish with cooking spray or a light coat of coconut oil.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, nutmeg, and salt. Whisk until well mixed.

      Add Wet Ingredients: In another bowl, combine the almond milk, maple syrup, and applesauce. Stir until blended.

        Combine and Fold: Pour the wet ingredients into the dry ingredients and mix well. Gently fold in the diced apples, walnuts, and raisins (if using).
