2 cups all-purpose flour

1 cup granulated sugar

1/2 cup packed brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 large eggs

2 teaspoons vanilla extract

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

Optional: 1/2 cup chopped walnuts or pecans

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt. Whisk until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until smooth and combined.

        Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl of dry ingredients. Gently stir until just combined; be careful not to overmix. The batter should be lumpy and thick.

          Fold in Apples and Nuts: Gently fold in the diced apples and nuts (if using) into the batter until evenly distributed.
