2 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/2 teaspoon nutmeg

1/2 cup unsalted butter, melted and cooled

1 large egg

1 cup buttermilk (or milk with a tablespoon of vinegar)

2 cups peeled, cored, and chopped apples (Granny Smith or Honeycrisp work well)

1/2 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

Topping: 1 tablespoon granulated sugar mixed with 1 teaspoon cinnamon

Instructions
 

Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Whisk together dry ingredients: In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix until well combined.

      Mix wet ingredients: In another bowl, whisk together the melted butter, egg, buttermilk, and vanilla extract until smooth.

        Combine mixtures: Add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.

          Fold in apples and nuts: Gently fold in the chopped apples and nuts, ensuring they are evenly dispersed throughout the batter.

            Spoon batter into muffin tin: Fill each muffin cup about 2/3 full with batter. Sprinkle the cinnamon-sugar topping evenly over the tops of the muffins.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
