Ingredients

12 oz pasta (fettuccine or linguine)

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 teaspoon fresh thyme, chopped

1 teaspoon allspice

½ teaspoon cayenne pepper (adjust to taste)

1 cup coconut milk

½ cup heavy cream

1 tablespoon lime juice

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and diced bell pepper and cook for another 2 minutes until fragrant and softened.

Prepare the Shrimp: Add the shrimp to the skillet and season with thyme, allspice, cayenne pepper, salt, and pepper. Cook for 3-4 minutes or until shrimp are pink and cooked through.

Make the Creamy Sauce: Pour in the coconut milk and heavy cream, stirring to mix well. Increase the heat to bring the sauce to a gentle simmer. Allow it to simmer for 5-7 minutes until the sauce thickens slightly.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to ensure all the pasta is coated in the creamy sauce. Stir in lime juice for a zesty finish. Adjust seasoning if necessary.

Serve and Garnish: Divide the creamy shrimp pasta into bowls, garnishing with fresh parsley if desired. Serve immediately and enjoy!
