Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup Panko breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1/4 cup soy sauce

1 tbsp sesame oil

1 tbsp brown sugar

1 tsp black pepper

1 egg, beaten

1/4 tsp red pepper flakes (optional for heat)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp Sriracha sauce (or to taste)

1 tsp sesame oil

1 tsp lime juice

Optional: sliced green onions or sesame seeds for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

    Mix the Meatball Ingredients: In a large bowl, combine the ground meat, Panko breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, brown sugar, black pepper, beaten egg, and red pepper flakes. Mix well until all ingredients are fully incorporated.

      Shape the Meatballs: Use your hands to form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and nicely browned.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, in a small bowl, whisk together the mayonnaise, Sriracha, sesame oil, and lime juice. Adjust the Sriracha amount according to your heat preference.
