Ingredients

For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1/4 cup soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 large egg

1 teaspoon black pepper

1 teaspoon chili flakes (optional for extra spice)

2 teaspoons sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons Sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey

1/2 teaspoon garlic powder

Optional: a sprinkle of sesame seeds, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Meatball Mixture: In a large bowl, combine the ground beef (or pork), breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, sesame oil, brown sugar, egg, black pepper, and chili flakes. Mix until well combined, but do not overwork the meat.

Shape the Meatballs: Using your hands, roll the meat mixture into balls, approximately 1-inch in diameter. Place the meatballs on the prepared baking sheet, spacing them about an inch apart.

Bake the Meatballs: Bake in the preheated oven for 18-20 minutes or until they are cooked through and browned on the outside.

Make the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, mix together the mayonnaise, Sriracha, lime juice, honey, and garlic powder. Taste and adjust the spice level to your preference.

Serve: Once the meatballs are ready, let them cool for a few minutes. Serve hot, garnished with a sprinkle of sesame seeds and alongside the spicy mayo dip.

Enjoy your Korean BBQ Meatballs with Spicy Mayo Dip!
