Ingredients

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey

1 teaspoon gochugaru (Korean red pepper flakes)

1/2 teaspoon black pepper

1 large egg

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon Sriracha sauce (adjust for spice preference)

1 teaspoon lime juice

1 teaspoon sesame oil

Optional: chopped green onions or sesame seeds for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix the Meatball Ingredients: In a large bowl, combine the ground beef, breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, honey, gochugaru, black pepper, and the egg. Mix thoroughly with your hands or a spoon until everything is well combined.

Form the Meatballs: Shape the mixture into bite-sized meatballs, approximately 1-inch in diameter, and place them on the prepared baking sheet.

Bake the Meatballs: Bake in the preheated oven for about 20-25 minutes or until the meatballs are cooked through and browned on the outside.

Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the dip by mixing together the mayonnaise, Sriracha sauce, lime juice, and sesame oil in a small bowl. Adjust the Sriracha to taste depending on your spice preference.

Serve: Once the meatballs are done baking, remove them from the oven and let them cool slightly. Serve them warm alongside the spicy mayo dip. Optionally, garnish the dip with chopped green onions or sesame seeds for extra flair.

Enjoy: These Korean BBQ meatballs make for a perfect appetizer or snack!
