1 lb ground beef (preferably 80/20)

3 tablespoons soy sauce

2 tablespoons brown sugar

2 teaspoons sesame oil

3 garlic cloves, minced

1 teaspoon ginger, minced

1 tablespoon gochujang (Korean red chili paste)

1/2 teaspoon black pepper

3 green onions, chopped (reserve some for garnish)

1 cup cooked jasmine rice

1/2 cup shredded carrots

1/2 cucumber, thinly sliced

2 teaspoons sesame seeds

Lettuce leaves (for serving)

Instructions
 

Cook the Beef: In a large skillet over medium-high heat, add the ground beef. Cook for about 5-7 minutes until browned, breaking it apart with a spatula. Drain excess grease if necessary.

    Prepare Seasoning: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, gochujang, and black pepper until smooth.

      Combine: Pour the seasoning mix over the cooked ground beef in the skillet. Stir well to combine and cook for an additional 3-4 minutes, allowing the flavors to meld while continuously stirring.

        Add Vegetables: Stir in the chopped green onions and shredded carrots. Cook for another 2-3 minutes until the veggies are tender but still crisp.

          Serve: To assemble the bowls, place a generous scoop of cooked jasmine rice at the bottom. Top with the Korean beef mixture, followed by sliced cucumbers.

            Garnish: Sprinkle sesame seeds and any remaining chopped green onions over the bowls. Serve with lettuce leaves on the side for wrapping.
