Ingredients
  

8 oz whole wheat or gluten-free pasta (such as rotini or penne)

2 cups cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1 cup fresh basil leaves, torn

1/4 cup red onion, finely chopped

1/4 cup sun-dried tomatoes, chopped

1/4 cup nutritional yeast (optional for cheesy flavor)

Zest of 1 lemon

Juice of 1 large lemon

3 tablespoons olive oil

Salt and pepper to taste

Pinch of red pepper flakes (optional for heat)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large mixing bowl along with the torn basil leaves and chopped sun-dried tomatoes.

      Make the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, nutritional yeast (if using), salt, pepper, and red pepper flakes until well combined.

        Combine: Add the cooled pasta to the bowl with the vegetables. Pour the dressing over the pasta mixture and toss until everything is well coated.

          Chill and Serve: Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
