Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

8 oz fettuccine pasta

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Drain and set aside.

Prepare Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper on both sides.

Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Once hot, add the chicken breasts and sear for 5-7 minutes on each side until cooked through and golden brown. Remove from the skillet and set aside.

Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the dried Italian herbs and cherry tomatoes, cooking for another 3-4 minutes until the tomatoes start to soften.

Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring well to combine. Bring the mixture to a gentle simmer.

Add Cheese: Gradually stir in the Parmesan cheese until melted and the sauce becomes smooth.

Combine Pasta and Chicken: Slice the cooked chicken into strips and add it back to the sauce. Gently fold in the cooked fettuccine, ensuring everything is well coated with the sauce.

Serve: Plate the pasta and chicken mixture, garnishing with fresh basil leaves. For extra flair, sprinkle with additional Parmesan cheese.
