2 cups rotini pasta

1 cup cooked chicken breast, diced

1 cup cherry tomatoes, halved

½ cup cucumber, diced

½ cup red bell pepper, diced

½ cup black olives, pitted and sliced

¼ cup red onion, finely chopped

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

½ teaspoon garlic powder

½ teaspoon dried oregano

Salt and pepper, to taste

⅓ cup olive oil

3 tablespoons red wine vinegar

Juice of 1 lemon

Instructions
 

Begin by cooking the rotini pasta according to package instructions in salted water. Once cooked al dente, drain and rinse under cold water to cool.

    In a large mixing bowl, combine the cooled pasta, diced chicken, cherry tomatoes, cucumber, bell pepper, black olives, red onion, and feta cheese.

      In a separate small bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic powder, oregano, salt, and pepper to create the dressing.

        Pour the dressing over the pasta mixture and gently toss until everything is well coated.

          Stir in the chopped parsley, adjusting seasoning with additional salt and pepper if desired.

            Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
