1 lb chicken breast, diced

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 cup whole milk

2 tablespoons olive oil

Juice and zest of 2 lemons

1 teaspoon dried oregano

1 teaspoon thyme

Salt and pepper to taste

2 cups fresh spinach or kale

1/2 cup cooked orzo pasta (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot over medium heat, add olive oil. Once hot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and fragrant.

    Cook the Chicken: Add the diced chicken breast to the pot and season with salt, pepper, oregano, and thyme. Cook for another 5-7 minutes until the chicken is browned and cooked through.

      Add Broth and Lemon: Pour in the chicken broth and bring the mixture to a boil. Reduce heat and simmer for about 15 minutes. Add the lemon juice and zest, stirring well to combine.

        Make it Creamy: Stir in the whole milk gradually, ensuring the soup remains smooth. If desired, add the orzo pasta at this stage and cook until al dente.
