Ingredients

1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

1 cup sweetened condensed milk

1 package (8 oz) cream cheese, softened

1 teaspoon vanilla extract

1 cup crushed graham crackers

1/2 cup unsweetened coconut flakes

Maraschino cherries and pineapple slices for garnish (optional)

Instructions

In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

Add the sweetened condensed milk and vanilla extract to the cream cheese, and mix until fully combined.

In a separate bowl, whip the heavy cream until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture until well blended.

Stir in the drained crushed pineapple and coconut flakes until evenly distributed.

In a 9x9 inch baking dish, start layering by spreading half of the crushed graham crackers on the bottom.

Pour half of the pineapple cream mixture over the graham crackers and spread evenly.

Repeat the layers with the remaining crushed graham crackers and the rest of the pineapple cream mixture.

Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Once set, cut into squares and garnish with maraschino cherries and pineapple slices if desired before serving.
