One-pan meals are defined by their unique cooking method, where all ingredients are cooked together in a single vessel. This cooking style not only streamlines the preparation process but also enhances the overall flavor profile of the dish. As ingredients meld and simmer together, they develop a depth of flavor that’s hard to achieve with separate cooking methods.

Ingredients

1 lb (450g) boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

½ cup honey

½ cup BBQ sauce (your favorite brand)

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers, chopped (red, yellow, or green)

1 tsp smoked paprika

1 tsp dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Start by cutting the chicken thighs into bite-sized pieces. Season with salt, pepper, and smoked paprika.

Sauté the Aromatics: In a large skillet or cast-iron pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion becomes translucent (about 3-4 minutes).

Brown the Chicken: Add the seasoned chicken thighs to the skillet, cooking until they are no longer pink (about 5-7 minutes). Stir occasionally to brown evenly.

Combine the Rice and Sauce: Once the chicken is cooked, stir in the chopped bell peppers, followed by the long-grain rice. Mix well so the rice is coated with the oil and juices.

Add Liquids: In a small bowl, mix the honey and BBQ sauce. Pour this sauce over the chicken, rice, and vegetables. Follow with the chicken broth, ensuring all ingredients are submerged.

Simmer: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for about 20 minutes or until the rice is tender and has absorbed the liquid.

Fluff and Serve: After 20 minutes, check the rice for doneness. If it's ready, remove the lid, fluff the rice with a fork, and garnish with freshly chopped parsley.

Enjoy: Serve the Honey BBQ Chicken Rice warm, drizzled with extra BBQ sauce if desired!
