Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

4 cloves garlic, minced

1 medium onion, diced

2 cups baby spinach

1 lemon (zest and juice)

1 cup chicken broth

1 cup heavy cream

1 lb (450g) potato gnocchi

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and season with salt and black pepper. Cook until golden brown on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Aromatics: In the same pot, add diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

      Combine Ingredients: Return the cooked chicken to the pot. Add the chicken broth, heavy cream, lemon zest, lemon juice, and dried thyme. Stir well to combine.

        Add Gnocchi: Bring the mixture to a gentle simmer. Add the potato gnocchi and cook according to the package instructions, usually about 3-5 minutes, until they float to the top.

          Add Spinach: Once the gnocchi is cooked, gently fold in the baby spinach. Cook until just wilted, about 1-2 minutes. Adjust seasoning with additional salt, pepper, and more lemon juice if desired.
