2 salmon fillets (about 6 ounces each)

Salt and pepper, to taste

1 tablespoon olive oil

1 cup uncooked orzo pasta

2 cups low-sodium chicken broth (or vegetable broth)

1 lemon (zested and juiced)

2 cups fresh spinach, chopped

1/2 cup cherry tomatoes, halved

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon butter

Parmesan cheese, for serving (optional)

Season the Salmon: Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper.

    Cook the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for 4-5 minutes until the skin is crispy. Carefully flip the salmon and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add a little more olive oil if necessary. Add the minced garlic and cook for about 30 seconds until fragrant.

        Cook the Orzo: Stir in the orzo pasta and toast for 1 minute. Pour in the chicken broth, lemon zest, and lemon juice, and bring to a boil. Reduce the heat to a simmer, cover, and cook for about 10-12 minutes or until the orzo is tender and liquid is absorbed.

          Add Vegetables: Uncover the skillet and gently stir in the fresh spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach has wilted.
