2 cups cooked jasmine rice (preferably day-old)

1 lb boneless chicken thighs, diced

2 tablespoons soy sauce

2 tablespoons teriyaki sauce

1 tablespoon vegetable oil

3 cloves garlic, minced

1 tablespoon ginger, grated

1 cup mixed vegetables (carrots, peas, corn)

2 green onions, sliced

3 large eggs, lightly beaten

1 tablespoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Nori sheets, cut into strips for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken thighs with soy sauce and teriyaki sauce. Let it marinate for at least 15 minutes.

    Prepare the Fried Rice Base: Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, sautéing until fragrant (about 1-2 minutes).

      Cook the Chicken: Increase heat to high and add the marinated chicken to the skillet. Cook until the chicken is golden brown and cooked through, approximately 5-7 minutes. Remove chicken from the skillet and set aside.

        Scramble the Eggs: In the same pan, push the chicken to one side and pour the beaten eggs onto the other side. Scramble until fully cooked, then mix with the chicken.

          Add Vegetables and Rice: Toss in the mixed vegetables and stir-fry for another 2-3 minutes. Then, add the day-old jasmine rice to the skillet, breaking up any clumps, and mix well with the chicken, eggs, and vegetables.

            Season the Fried Rice: Drizzle sesame oil over the rice mixture and season with salt and pepper to taste. Add the sliced green onions and stir-fry for an additional 2-3 minutes until everything is heated through and well combined.

              Serve: Transfer the fried rice to a serving dish. Garnish with sesame seeds and strips of nori, if using.
