1 cup corn kernels, drained

1 cup diced tomatoes

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream

1/4 cup guacamole

1/4 cup salsa

4 large flour tortillas

1 teaspoon taco seasoning

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare Components: If not using leftover chicken, cook and shred the chicken breast. In a bowl, mix the shredded chicken with taco seasoning to enhance flavor.

Lay the Tortilla: Place a large flour tortilla on a clean surface or a plate.

Layer Ingredients: Start layering by spreading 1/4 cup of refried beans evenly over the tortilla, followed by 1/4 cup of Mexican rice.

Add Chicken: Spoon about 1/2 cup of the shredded chicken over the rice, ensuring an even distribution.

Add Corn: Sprinkle 1/4 cup of corn kernels over the chicken layer, followed by 1/4 cup of diced tomatoes.

Layer Greens and Cheese: Add a handful of shredded lettuce, then top with 1/4 cup of shredded cheese.

Finish with Condiments: Add a dollop of sour cream and guacamole in the center, followed by a drizzle of salsa.

Roll the Burrito: Carefully fold in the sides of the tortilla and then roll it tightly from the bottom up to form a burrito. Ensure it's secure.

Repeat Steps: Repeat the layering and rolling process for the remaining tortillas and ingredients.

Serve: Cut the burritos in half diagonally, and place on a serving platter. Garnish with chopped cilantro and serve with lime wedges on the side.
