Sheet Pan Sausage and Veggies

Simply toss everything with olive oil and seasonings, then roast it all in the oven. In just 45 minutes, you’ll have a hearty and satisfying one-pan meal that’s sure to please the whole family!

Ingredients
  

1 pound of Italian sausage (mild or spicy, your choice)

2 cups of bell peppers (mixed colors: red, yellow, green), sliced

1 large red onion, cut into wedges

2 cups of zucchini, sliced into half-moons

1 cup of cherry tomatoes, halved

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley for garnishing (optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper for easy cleanup.

    In a large mixing bowl, combine the sliced bell peppers, red onion, zucchini, and cherry tomatoes.

      Pour in the olive oil and sprinkle the garlic powder, paprika, oregano, salt, and black pepper over the vegetables. Toss everything together until well coated.

        Nestle the Italian sausage links among the vegetables on the sheet pan, ensuring even spacing.

          Roast in the preheated oven for 25-30 minutes, or until the sausage is cooked through (internal temperature should reach 160°F/70°C) and veggies are tender with slight caramelization.

            Once done, remove from the oven and let rest for a few minutes.

              Garnish with freshly chopped parsley if desired, then serve hot as a complete meal or with crusty bread!
