When it comes to creating a delectable Shrimp and Avocado Bowl, the star of the show is undoubtedly the shrimp. The importance of selecting fresh, high-quality shrimp cannot be overstated. Fresh shrimp not only enhances the dish's flavor but also contributes to its overall texture. When shopping for shrimp, look for those that are firm, translucent, and have a mild scent of the sea. Avoid any shrimp that appears dull or has an off-putting odor, as these are indicators of age or poor quality.

Instructions

Marinate the Shrimp: In a bowl, combine the shrimp with olive oil, garlic, smoked paprika, cayenne pepper, salt, pepper, and lime juice. Let marinate for about 15-20 minutes while you prepare the other ingredients.

Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, salt, and pepper. Mix well and set aside to let the flavors meld.

Make the Lime-Chili Sauce: In a small bowl, whisk together sour cream (or Greek yogurt), mayonnaise, lime juice, chili powder, honey, and salt until smooth. Adjust seasoning as needed and set aside.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side or until pink and cooked through. Remove from heat.

Assemble the Bowls: If desired, place a base of cooked brown rice or quinoa in your bowls. Top each bowl with diced avocado seasoned with lime juice and salt. Add a generous portion of cooked shrimp and finish with a scoop of mango salsa.

Drizzle and Serve: Drizzle the lime-chili sauce over the top of each bowl and garnish with lime wedges and additional cilantro. Serve immediately and enjoy!
