Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar (brown or white)

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/2 teaspoon vanilla extract

1/2 cup milk (dairy or non-dairy)

1 large egg

Oil for frying (vegetable or coconut)

Powdered sugar (for serving)

Honey or maple syrup (for drizzling)

Instructions

Prepare the Batter: In a mixing bowl, combine the mashed bananas, sugar, and vanilla extract. Mix well until smooth. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).

Combine Ingredients: Gradually add the dry ingredients to the mashed banana mixture, alternating with the milk and adding the egg. Mix until just combined; avoid overmixing to keep the fritters light and fluffy.

Heat the Skillet: Heat a skillet over medium heat and add enough oil to generously coat the bottom.

Fry the Fritters: Once the oil is hot, drop spoonfuls of the batter into the skillet, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side or until they are golden brown. Adjust the heat if necessary to avoid burning.

Drain and Serve: Remove the fritters from the skillet and place them on a paper towel-lined plate to soak up excess oil.

Enjoy: Sprinkle with powdered sugar and drizzle with honey or maple syrup before serving. These fritters are best enjoyed warm!
