Slow Cooker Cowboy Casserole - An Organized Chaos

Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

2 cups frozen hash brown potatoes

1 cup shredded cheddar cheese

1 cup sour cream

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a skillet, brown the ground beef over medium heat, adding the diced onion and minced garlic until the onion is translucent. Drain excess fat.

    In the slow cooker, combine the cooked beef mixture, black beans, corn, diced tomatoes with green chilies, and taco seasoning. Stir thoroughly to combine.

      Layer the frozen hash brown potatoes on top of the mixture in the slow cooker. Do not stir.

        Cover and cook on low for about 6-7 hours or on high for 3-4 hours.

          About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top of the casserole and cover to allow it to melt.

            In a small bowl, mix the sour cream with a pinch of salt and pepper. Serve the casserole hot, drizzled with the seasoned sour cream and garnished with fresh cilantro if desired.
