Southwest Ground Beef and Sweet Potato Skillet

1 lb ground beef (80/20 for flavor)

1 medium sweet potato, diced into small cubes

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 tablespoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Prep the Sweet Potato: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced sweet potato and season with a pinch of salt and pepper. Sauté for about 8-10 minutes, or until they begin to soften, stirring occasionally. If they start to brown too much, reduce the heat slightly.

    Cook the Beef: Push the sweet potatoes to one side of the skillet. In the cleared space, add the remaining tablespoon of olive oil. Once it’s heated, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they start to soften. Add the ground beef to the skillet, breaking it apart with a spatula as it cooks until browned, about 5-7 minutes.

      Add Garlic & Spices: Once the beef is cooked, add minced garlic, chili powder, cumin, smoked paprika, and stir well to combine with the meat and vegetables. Let it cook for another minute to release the spices’ flavors.

        Mix in Remaining Ingredients: Stir in the black beans and corn into the skillet, mixing everything well. Allow it to cook together for another 3-5 minutes until everything is heated through. Taste and adjust seasoning with additional salt and pepper if needed.

          Cheese It Up: Sprinkle shredded cheese over the top of the skillet mixture, reduce the heat to low, and cover the skillet for a couple of minutes until the cheese is melted.

            Serve: Remove from heat and garnish with chopped fresh cilantro. Serve hot with lime wedges on the side for a splash of freshness.
