1.5 lbs chicken thighs, boneless and skinless

1 can (14 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

2 red bell peppers, diced

1 green bell pepper, diced

1-2 fresh red chilies, diced (adjust to taste)

1 tablespoon fresh ginger, grated

1 tablespoon smoked paprika

1 teaspoon cumin

1 tablespoon lime juice

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Cooked rice (to serve)

Prepare the Chicken: Season the chicken thighs with salt, pepper, and smoked paprika. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear until golden brown on both sides for about 5-7 minutes. Remove and set aside.

    Sauté Vegetables: In the same skillet, add the chopped onion, garlic, ginger, and fresh red chilies. Cook for about 3-4 minutes until the onion is translucent and fragrant.

      Add Bell Peppers: Stir in the diced red and green bell peppers and continue cooking for another 3-4 minutes until they are tender.

        Incorporate Coconut Milk: Pour in the coconut milk and stir well. Let it come to a gentle simmer.

          Cook Chicken in Sauce: Return the seared chicken thighs to the skillet. Reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the chicken is fully cooked and tender.

            Final Touch: Stir in the lime juice and check seasoning. Adjust salt and pepper to taste.
