Spicy Pineapple Jalapeño Chutney

Ingredients
  

2 cups fresh pineapple, diced

1-2 jalapeño peppers, seeded and finely chopped (adjust according to heat preference)

1 small red onion, finely chopped

1/2 cup brown sugar

1/4 cup apple cider vinegar

1 tablespoon grated fresh ginger

1 garlic clove, minced

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon salt

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Instructions
 

In a medium saucepan, combine the diced pineapple, chopped jalapeños, and chopped red onion. Stir to combine.

    Add the brown sugar, apple cider vinegar, grated ginger, minced garlic, ground cumin, ground coriander, and salt to the pan. Mix well until the sugar is somewhat dissolved.

      Place the saucepan over medium heat and bring the mixture to a simmer. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally until the chutney thickens and the pineapple becomes tender.

        Once the chutney reaches the desired consistency, remove it from the heat and stir in the lime juice.

          Allow the chutney to cool slightly, then transfer it to a sterilized jar or airtight container. Refrigerate for at least an hour to let the flavors meld together.

            Serve chilled or at room temperature as a condiment alongside grilled meats, fish, or as a spread on sandwiches. Garnish with fresh chopped cilantro before serving.
